Nutella Swirl Cupcakes

Been looking around for a new recipe to try. Additional requirements? It must have some element of chocolate in it. That was colleague T’s request when I asked them what they would like to have today.

So during lunchtime yesterday, I was furiously looking through all the recipe resources online and voila! I found this recipe on bakingsheet, a favourite blog I like to go to for all sorts of recipes.

I took the liberty to change the portion of nutella used, knowing that my male counterparts at work do not care much for calorie-counting. The more decadent the cupcakes are, the better.

The result? A really rich mix of cupcakes and nutella. A little too rich for my liking, but my male counterparts at work couldn’t get enough of them. As a matter of fact, one even suggested that I ‘inject’ more nutella into the cupcakes!

Nutella Swirl Cupcakes

Nutella Swirl Cupcakes
1 3/4 cup all-purpose flour, sifted
1/4 tsp salt
2 tsp baking powder
140g butter, softened
3/4 cup white sugar
3 egg, medium-sized
1/2 tsp vanilla extract
1 cup nutella, approx.

  1. Preheat oven to 160°C.
  2. Line 12 muffin tins with cupcake or muffin liners.
  3. Sift together the flour, salt and baking powder in a medium bowl. Leave aside.
  4. Cream together the butter and sugar in a mixing bowl till texture is light.
  5. Add in the eggs, one at a time till fully incorporated.
  6. Add in the vanilla extract.
  7. Gradually add in the dry ingredients into the wet mix till well-mixed.
  8. Fill up each liner with batter till about 3/4 full.
  9. Top up each cupcake with approx. 1 tbsp of nutella. Use a toothpick to swirl the nutella into the batter.
  10. Bake for 20 minutes or till a toothpick inserted in the middle comes out clean.
  11. Remove individual cupcakes to cool completely on a wire rack before storing.

Yield : 10-12 regular cupcakes

    I’ve made some peanut butter cookies, which I thought is quite nice. It’s at http://decadenze.com/2006/07/18/peanut-butter-cookies-for-a-homecoming-hubby/.

    Did you try replacing the nutella with peanut butter? It works nicely as well! In fact Donna Hay’s original recipe uses peanut butter.
