Chewy Chocolate Chunk Cookies

Have been meaning to try this recipe for the longest time, just that I couldn’t make up my mind which brand of bittersweet chocolate to use. But with some colleagues travelling to the parent company in a couple of days, I decided it’s time not to sit on the recipe thebakerwhocooks is famous for, but to actually get down to baking it for my counterparts in the States.

With only two nights to buy the ingredients and get down to actual baking, I decided to drop Cheryl an email requesting for some recommendation. And she was really nice to reply my email promptly with a recommendation. Thanks for your help, Cheryl!

Chewy Chocolate Chunk Cookies

Chewy Chocolate Chunk Cookies
2 cup all purpose flour
2 tsp cornstarch
1 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
1 egg
2 tsp vanilla extract
8 oz bittersweet chocolate, cut into chunks

  1. Preheat oven to 180°C.
  2. Grease or line a baking sheet with baking paper.
  3. Sieve together the flour, cornstarch, baking soda and salt together in a medium bowl. Leave aside.
  4. Cream together the butter and sugars in a mixing bowl till smooth.
  5. Add in the egg and vanilla extract. Blend in.
  6. Gradually add in the dry ingredients into the wet mix till well-mixed.
  7. Add in the chocolate chunks and mix well.
  8. Drop round tablespoonfuls of dough onto the baking sheet.
  9. Bake for 8-10 minutes or until golden brown around the edges.
  10. Cool completely on wire rack.

Yield : 40 2-inch dia. cookies

Due to some logistical problems, I’ve decided to abandon the plan to let a fellow colleague bring this to the States. The bulk of the cookies are going to my colleagues, and the rest to the Hubby’s colleagues.

Sad to say, my counterparts in the States shall have to wait for their turn yet again. But no matter. Someone will be sent there for training soon enough.
