Review : Oreo Cupcakes

I tasted one cupcake without the frosting (there was one odd one out because the cupcake stand could only take 23 and I baked 24). And it tasted absolutely heavenly!

The cupcakes are surprisingly easy to prepare and bake. More than manageable on a week night. However, I don’t think I can handle that kind of excitement too often - excitement from the two pooches - when I’m in an absolute rush to finish up with the baking, wash up and go to bed.

I might have put on too much frosting, for I needed to make 1.5 times the portion that was called for in the recipe. And it was a tad too sweet for my liking. Perhaps I should have gone easy on the confectionary sugar. It was too sweet even for the liking of the self-confessed ’sweet tooths’ in my office.

What was also stressful was the need to wake up extra early to go to the office to finish up with the frosting, bringing the cupcakes, stand, frosting and other necessary equipment.

I must have looked like I just returned from the supermarket instead of reporting for work! :lol:

All in all, it’s a fantastic and innovative recipe which calls for minimal baking skills (considering what an amateur baker I am!).

Might try making some changes to the frosting to make it less sweet though, perhaps cutting the sugar content down to 1/2 of the portion, provided that the texture and the consistency of the frosting is not adversely affected.

Sorry for pushing you guys a yard nearer towards diabetes. :(
