Sweet Decadenze

The Hubby was away on a vacation with a colleague for the past 5 days. To celebrate his homecoming (albeit a late one due to flight delay), I decided to bake his favourite - peanut butter cookies.

I don’t mind peanut butter, but I’m not a huge fan. On the other hand, The Hubby has a really intense love for peanut butter, so much so that he could have it anytime, anywhere. As a matter of fact, he is the reason why I searched through the internet database extensively in order to find the perfect recipe for peanut butter cookies.

I don’t profess to possess the best peanut butter cookies recipe, but this one I have is a slightly improved version of about 5 recipes I came across. Incidentally, it’s also one of the more complicated and time-consuming one

Peanut Butter Cookies
1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter
1/2 cup light brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
1/2 cup peanut butter

1. Preheat oven to 150°C.
2. Sift together flour, baking soda and salt.
3. In a large bowl, beat together the butter and peanut butter until smooth.
4. Scrap the bowl down and mix the sugars into the butters until smooth.
5. Beat in egg and vanilla until integrated.
6. Gradually beat in the flour mixture slowly.
7. Double wrap dough in plastic wrap and refrigerate for an hour or up to a couple of days.
8. Form the dough into 1-inch balls and place about 3 inches apart on a greased baking sheet.
9. Using a fork dipped lightly in flour or water, lightly press the cookies, flattening and forming a criss-cross pattern on each cookie.
10. Refrigerate the uncooked cookies for at least 15 minutes.
11. Bake for 15 minutes, one tray at a time.
12. Cool on baking sheet for 1 minute, then transfer to wire rack to cool completely.

Yield : 30 cookies

With the first batch baking away in the oven, I’m starting to wonder if I should bring some of the cookies to work tomorrow or leave it all for The Hubby to chomp down since he will still be on leave at home for the next couple of days. Hmmmm…

These cookies are by far The Hubby’s favourite of all those I had ever baked. Give it a try if you are a peanut butter fan like him as well!
