Simply Sugary Cookies

I meant to bake these cookies on Friday evening after a fruitful trip to Kinokuniya at Ngee Ann City (new additions to my baking books collection yet again), but was too tired when I got home.  As always, I was surfing my favourite recipes resource blog - Nic’s Bakingsheet when I came across this simple yet interesting recipe for sugar cookies. 

I’m suffering from Monday blues, like 99.9% of all working population who start the week on a Monday… but something was nagging me at the back of the mind all the time today.  I guess it’s an unfinished task I intended to but did not set out to do on Friday that was bothering me.

Hence, Monday blues or not, I’ve made up my mind!

Simply Sugary Cookies

Simply Sugary Cookies
2 cup all purpose flour
1/2 tsp baking powder
1/4 tsp salt
5 tbsp butter (room temperature)
2 tbsp shortening
1/2 cup sugar
1 egg
1 tsp vanilla extract
1/8 tsp almond extract
1/4 cup sugar, for rolling

  1. Preheat oven to 160°C.
  2. Line a baking sheet with baking paper.
  3. Sift together the flour, baking powder and salt in a medium bowl. Set aside.
  4. In a large bowl, cream together the butter, shortening and sugar until smooth and light, for about 1 minute.
  5. Add the egg, vanilla and almond extracts into the batter until fully incorporated.
  6. Gradually mix in the flour mixture until well-mixed.
  7. Shape dough into 1-inch balls and roll it in sugar.
  8. Place on the prepared baking seet and press lightly with palm to flatten.
  9. Bake for 9-10 minutes or until the edges are very slightly browned.
  10. Leave cookies on baking sheet for 2 minutes before removing to cool wire rack.

Yield : 40 cookies

This is really a simple and sweet recipe, and I’ve made some minor changes from the original recipe I came across.  It still tastes as good, I hope! :lol:
