Review : Delectable Lemon Cheesecake

I think I’ve found the ‘perfect’ formula for a really sinfully rich cheesecake!  Well, at least to me, it’s perfect.  It’s everything I want in a cheesecake… smooth, rich and satisfying, to say the least.

Not that the other cheesecake recipes I’ve tried so far are not good.  It’s just that this particular one suits my palate better.

I was discussing about the cheesecake with my colleagues as they were tasting it.  K the cheesecake ‘monster’, as usual, requested for a higher layer of cheese the next time I bake it for them.  I told him that the recipe I received wasn’t very clear on the yield size of the cake, hence I used a 9-inch springform pan, the only size available at home at the moment.  And my intention is to bake using an 8-inch springform pan the next time.

The rest of them begged to differ, though.  They thought the layers of cheese and crust are just right and do not require any further adjustment to the recipe.  Personally I feel that the cheesecake should remain as it is - 0.8 inch of cheese and 0.2 inch of crust.  The cheese layer is really rich.  Increasing it might yield undesirable results.

However colleague J said that the cheesecake which her church-mate baked had a higher layer of cheese.  I guess I’ll try the recipe again with an 8-inch springform pan soon just to experiment.  There’s no lack of cheesecake fans in my family! :lol:
