Baking Class : Emulsified Sponge Cakes
The first lesson of the cake-making class and we made 2 emulsified sponge cakes - Egg Sponge Cake and Swiss Roll.
The recipes were relatively easy to follow through as compared to the pastries’ recipes. And I decided to partner with one of the other 3 classmates from the previous pastry-making class since both of our partners decided not to continue with this cake-making module.
Our Egg Sponge Cake sunk in the middle during the first attempt, like many others. We decided to re-do that since we have the time, and took our time to ensure that the proportion of the ingredients were accurate, as advised by the teacher.
Our Swiss Rolls were just perfect! We each brought home a 20-inch Swiss Roll cut into 3 portions. I gave away 2 portions to my folks and they, in turn, gave away 1 portion of it to the security guards on night duty at their estate. Anything goes, so long that they enjoy the food, and there is no wastage.
On the agenda next week, we’ll be baking a Basic Pound Cake and a Utility Cake. Will update again then!

Hmmm… if you don’t mind, may I know where are you taking the caking-baking lessons? Btw, any good schools here to recommend for learning how to bake/make pastry, cakes, etc. (preferably with hands-on)?

They have quite a number of courses. But it seems that their schedule on the “Baking Workshop” is updated until May only. Btw, are you taking the baking workshop?
Nevertheless, I’ve joined their mailing list so that I could be informed of any upcoming classes.
