Chocolate Chip Muffins

The second series of 12 muffins I baked for my Mum will be the chocolate chip muffins, a simple and fool-proof recipe with the safest ingredient of all - chocolate chips.

Chocolate Chip Muffins

Chocolate Chip Muffins
1 1/2 cup all-purpose flour
1/3 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup sour cream
2 egg, medium-sized
1 tsp vanilla extract
1 1/2 cup semi-sweet chocolate chips, approx.

  1. Preheat oven to 200°C.
  2. Line 12 muffin tins with cupcake or muffin liners.
  3. Sift together the flour, sugar, baking powder, baking soda and salt in a medium bowl. Set aside.
  4. Melt the butter and in a small bowl, whisk together with sour cream, egg and vanilla until well-mixed.
  5. Stir the butter mixture into the flour mixture until just combined.
  6. Add in the chocolate chips and stir lightly until well-distributed.
  7. Fill up each liner with batter till about 3/4 full.
  8. Bake for 20 minutes or till a toothpick inserted in the middle comes out clean.
  9. Remove individual muffins to cool completely on a wire rack before storing.

Yield : 12 regular muffins

I did not get to taste any of these muffins as the yield was exactly 12, as required by my Mum.  I’ll need to wait for the review from her colleagues and herself before I can tell if it’s any good.
