Kenny Rogers Corn Muffins

I absolutely love dining at Kenny Rogers!  A pity that they have been closing down most of their outlets and the existing ones are so out of the way for me.

Give me their chicken quarter pounder, sinful macaroni cheese and corn muffins anytime!

And boy, was I ecstatic when I came across this recipe online about 2 months’ back.  I haven’t been able to find yellow cornmeal at the regular haunts I go to for my baking needs, but it was right there on the shelves at Phoon Huat Hougang when I was there on Friday.  Strange… I was very sure it wasn’t there the last time.

Kenny Rogers Corn Muffins

Kenny Rogers Corn Muffins
1 1/2 cup all-purpose flour
3/4 cup yellow cornmeal
1/2 tsp baking powder
1/2 cup butter/margarine, room temperature
2/3 cup sugar
1/4 cup honey
2 egg, medium-sized
1/2 tsp salt
1/2 cup milk
3/4 cup yellow corn, frozen

  1. Preheat oven to 200°C.
  2. Line 12 muffin tins with cupcake or muffin liners.
  3. Sift together the flour, cornmeal and baking powder in a medium bowl. Set aside.
  4. Cream together the butter, sugar, honey, eggs and salt in a large bowl until well-mixed.
  5. Add the dry ingredients and blend thoroughly.  Add in the milk while mixing.
  6. Add in the corn to the mixture and combine by hand until well-mixed.
  7. Fill up each liner with batter till about 3/4 full.
  8. Bake for 20-25 minutes or when muffin top begins to brown.
  9. Remove individual muffins to cool completely on a wire rack.

Yield : 15 regular muffins

The corn muffins taste quite good, and rather close to those we find at Kenny Rogers.  Of course nothing tastes like the original, but it’s close enough.

  1. wow, yours look seriously good! and we got the same recipe too! seems like there’s only 1 recipe out there, otherwise we can compare and try out each other’s. as for the cornmeal, it shd be there lah, juz that sometimes things do get out of stock mah :p do u stay very near hougang’s phoon huat? i’m staying in sembawang and i’m really lucky that there’s a phoon huat right at my MRT station =)

    I stay quite near Hougang Phoon Huat, within 10-15 minutes of walking actually. Just that I hate driving there. The parking is horrible behind the row of shophouses. Yet I can’t walk home after buying packfuls of sugar, flour and such.

    I’ve heard that the Sembawang branch is quite big and well-equiped! Lucky you. I was at Holland V’s Phoon Huat on Saturday and wow! So organised!

    Somehow my corn muffins turned out tasting a lot like honey corn muffins. I think I was too generous with the honey. :P


  3. hey CY, at least u drive!! tho’ parking is inconvenient, nothing beats having a car to take u around, from eating places that has got no MRT eg. geylang, to relieving u from having to carry heavy groceries!! i wouldnt mind much abt parking tho’, as long as i own a car. but too bad i don’t :(

    ya the phoon huat @ sembawang is quite good except the sales assistants arent too friendly. its like u ask..do u hv this and this…and they’ll reply u “its all there oredi. hv means hv, dun hv means dun hv.” so typical rite…looks like the service is sg has so much to improve on. to think govt keep emphasizing abt going the extra mile. in my opinion, it would be great if they can just do their job. wouldnt dream of receiving good service LOL.

    I go to Kenny Rogers because of their corn muffin. Their chicken and ribs are so so only.

    I was actually thinking of bringing snowskin mooncakes to work tomorrow, i.e. if I have the energy to bake tonight. :lol:


  6. Wow Evan, the service is really quite bad over at Sembawang huh. Hougang side is not too bad. They try to tell you which row which shelf. And I really bug them with lots of questions sometimes! :lol:

    When you ever have the opportunity, visit the one at Holland Village. My shopping experience there was… fantastic! But granted, I was just there to look-see-look-see in general and not looking for things in specific. So I can’t really comment on the service per se.

    Hi! It’s me. Bedok Phoon Huat is the worst, small and nothing much. I thought the one @ Bencoolen Street and Jurong East is not bad and more organised. Geylang one used to be quite good before moving over, now it’s smaller, they stack the good higher and quite cramp so kinda difficult to shop.


  8. holland V has a branch too? great, will drop by some day, except that place’s pretty inconvenient for me. u said your shopping experience had been fantastic over there? how so? the things are more or less the same rite? actually, i find that they’re still lacking in many things, such as the pull-apart muffin cups. u know which one i’m referring to? those that are more durable with pleats. i had to go down to BIY @ newton to get them. and they don’t even sell cupcake toppings like quins & jimmies. once again had to visit BIY.

    anyway, i heard there’re two more shops besides phoon huat & BIY selling cake/baking supplies. they’re gim him lee @ haig rd and chong trading @ the adelphi. hv u been there?


  9. Hi winterbiscuit - I would think the Bencoolen Street one would seem to be pretty well-stocked since it’s one of the biggest branch. But it’s so out of the way for me. :( Same goes for the one at Jurong East.

    Evan - Holland V has a branch at Chip Bee Garden side. They have more things than the Hougang Branch, and the stuff are put and stacked nicely, not in those yellow containers where I have to dig through to find stuff. I know what you’re talking about… the white ones and the strawberry ones. I got them at BIY too, but they are really expensive! Chong Trading carries a lot of Wilton stuff too! And I intend to go one of these days. It’s highly recommended by my baking instructor. There’s another place which used to carry till it was out of stock… think it’s the SKP branch at Onan Road.


  10. chip bee gardens!! isnt that a high class place where shermay lee conducts her lessons? a 1.5 hr class for 60 bucks! that area lined with posh restuarants that serve meagre portions of french cuisines? hehe :p

    i love wilton’s stuffs too. and seems that phoon huat brought in quite a no. of their products in the recent mths, esp the baking tins. yes i agree BIY’s stuffs are expensive. i bought the muffin cups for $2.90/20 pcs. i don’t even bear to use them LOL. is SKP another baking supplies shop? looks like i must visit one of these days.


  11. Yeah… it’s along that row of shops, but Phoon Huat is like right at the end of the shops. The third or fourth from the end, if I’m not wrong.

    SKP doesn’t sell baking supplies, they sell those plastic cups, containers etc which food vendors use. I’m not sure why the one at Onan Road carried the muffin cups though. Can go to www.skp.com.sg and take a look at what they sell. :)

    You can get those put apart muffin cases at Tanjong Katong Complex, the shop faces the main road. My mum just check it out today and they are selling 50 pcs like S$4, is it cheaper than BIY?
