Mooncakes & More Mooncakes
Had some friends over this evening to make some snowskin mooncakes together. There were 4 of us in total, so each of us made a different colour. All colours except for the green one (which is green tea flavour) had white lotus paste wrapped in them.

Aya did the white ones, Fen the green ones, Bun the pink ones and I did the yellow ones. We tried with both the plastic pink moulds and the more advanced yellow moulds as seen in this post, and all of us concluded that the yellow mould is not only easier to use, but also produces much nicer mooncakes.
A real pity that the yellow mould I managed to get are sold out in both the Hougang and Holland Village branches. If anyone knows which other branch still has that particular design, please let me know, ‘coz Aya and Bun want to get it so badly.
So anyhow, I made a trip down to Kwong Cheong Thye and came out of the shop over $100 poorer. :cry: I’ve gotten the necessities to bake the traditional mooncakes on my own based on the recipe I’d gotten from the baking class I attended at Creative Culinaire last Saturday. My new wooden moulds are now being treated in oil bath overnight. I intend to bake some ‘piglets’ for The Hubby tomorrow.
I also have some commercial mooncakes in my fridge now, including Shang Palace’s birdnest custard mooncakes and Eater Palace’s traditional yam mooncakes. The latter is a good substitute for those from Crown Prince’s Long Jiang, although in my opinion, it is still not as good as the original. Oh well, you can’t have the cake and eat it as well sometimes. Be thankful there is a close substitute.

Do u find Eater’s Place yam mooncakes a bit oily? I tried at the Taka stall, too oily, not sure if it’s because it’s freshly fried then. It’s sad Crown Hotel is no longer selling them

I find Eater Palace’s not so fragrant and the flaky skin not as nice too. As for oily, I thought it’s quite ok.
Ya, it’s really a pity. But I was thinking the chefs from the restaurant has to look for other jobs if it has ceased operations. Maybe wait for a year, and they will emerge again next year. From another restaurant perhaps.
Hi, real beautiful pastries & cakes u have whipped up there! But more importantly, you cook for ur dogs! Wondering if u’d know of any recipes for a non-bake cheesecake for a dog that’s allergic to just about everything?! Yikes.
My dog is coming 1 this oct but having trawled the whole WWW, i can’t seem to find a simple recipe to do up a cake where both the family & dog can tuck into.

Liz, a cheesecake for your dog? I’ll look through my ‘database’ and see if I can find anything. But mostly, things fit for our furkids’ consumption are usually a little too bland for us humans. I’ll post it up and email you as well if I find something. Then you have to look through the ingredients and see if it’s suitable for your dog.

Gotta give or take a little coz it’s dependent on the size of your mould and how thin/thick the snowskin you like.

I saw the smaller moulds (different pattern) and also different design from the yellow one we use @ Jurong East outlet. PH has another mould which is like making pineapple tarts, it pushes the whole mooncake out together with the pattern.

ask u.. which brand of colouring & favouring u buy. ? cos yesterday i try putting the yam flavoured colouring.. the color seems to be a bit light.

I use banana flavour for just a little of fragrance. Haven’t tried yam flavour. I get mine from Phoon Huat.
If it’s too light, maybe you try putting in a little more of the flavouring to make the colour darker?
Otherwise you might wanna try putting in yam paste in the mooncake and putting purple colour for the skin instead of a colouring which has flavour as well. Think the colouring might work better than one which has both colour and flavour?

Nope I don’t have a cooler bag. I think it’s ok if the mooncakes are out of the fridge for a while, just so long that it’s not in direct sunlight.

The number is somewhere on the mould.
But nevertheless i went to the simei branch just this tuesday. they ran out of the size 10 moulds.
