I’ve caught on the cupcakes fever again, albeit a little late.  It’s been such a long while since I baked cupcakes (last July, to be exact).

If you’ve been in the loop about the ‘flogger’ (food-blogger) scene in Singapore, you must have come across this website called Kuidaore by this lady called Joycelyn Shu.  And, if you have been religiously reading her blog like I do, you would have drooled like I did over the fantastic pictures showcasing her equally fabulous culinary and baking skills. 

As luck would have it, Joycelyn was invited by Shermay Cooking School to conduct some workshops on cupcakes.  I grabbed at the chance to sign up for both her workshops at the earliest opportunity, only to find out that all her February classes were full, and that only Fridays classes were still available for her March classes.

It was an opportunity too good to be missed, so I took half-day leave of absence from work today, just so I can attend this workshop.

There was some demostration and hands-on as well.  In short, we decorated 6 vanilla and 6 dark chocolate cupcakes each.  And we got to bring home all 12, not to mention a 10-page detailed recipes provided.  Worth every single cent!

I’ve heard that Joycelyn’s cupcake workshops are fully booked right up till September.  If you’re interested, call up the school and leave your name and contact number.  They’ll put you on the waiting list, or might just decide to conduct a few more classes to cater to the demand.

As for me?  I can’t wait to try out the recipes at home!

  1. dearie! wow, you attended the cupcake workshop by J. they look really good ya? how did the cupcakes taste? i hope they’re to your liking and did not leave the taste much 2b desired haha. its unbelievable that J is entirely self taught. her culinary knowledge can be be mistaken for someone who graduated from le cordon bleu.

    by any chance if you know how much does the silpat & madagascar bourbon vanilla extract cost? if im not wrong, they’re available in shermay’s retail shop and i thought of going there soon. pantry magic is another place to check out if you havent already!

    The cupcakes taste great! The buttercream is not too sweet; and the icing cream is just nice too!

    Yes, I find it so incredible that she is entirely self-taught. She’s so popular she’s booked up till September at Shermay’s. Incredible!

    The Madagascar Bourbon Vanilla Paste costs $49.95 and Extract costs $39.95, if I’m not wrong. :)

    I dropped by Pantry Magic yesterday afternoon before the Cupcakes Workshop started. I didn’t really find anything useful for me because everything is made in silicon. I still have my reservations about that material in the hot oven. :P

  3. CY dear, thx for letting me know the pricing of the vanilla extract =) in that case, i think the paste is more worth it what do u think? u just need to use a tiny bit for alot of flavor, compared to the extract. but still, quite ex lah.

    oh so pantry magic sells stuffs mostly in silicon? i don’t really like it too but silpat is different. its rather indispensable in baking, esp. when u do french desserts like macarons or mousse cakes. coz its heavy and there wont be any shifting like parchment paper does. other than that, i don’t use the other kinds of silicon bakeware too. most of the time is becoz, im not used to it :p but i think its worth a walk around chip bee gdns coz there are quite alot of shops there huh? shermays, pantry magic, phoon huat, bunalun. i wanna get some fleur de sel from bunalun. but that stretch of road will burn a big hole in my pocket. haha.

    btw, i’ll email u for exchanging of contacts so its easier to keep in touch when we meet in may =)

    Was the class easy to follow? I signed up for Kuidaore’s Cupcake Workshop Level 1 too and will be going down this PM. Gosh, looks like I won’t have a chance to follow up on Level 2 if it’s that popular!

    It’s easy to follow for the hands-on portion, but I found it a tad too much to absorb when J started on the frosting and icing methods. No worries though, because the 10-page recipe is very comprehensive!

    I have been following your blog for quite a while….very interesting….just curious btw…delighted and excited by your cupcakes…but just want to know where i can get the cupcake casing that you guys use in class?

    i know that it’s not really available in s’pore unless u order it online

    Grace, I know of two places which sell the white cupcake cases. One is Bake-It-Yourself (www.b-i-y.com) and the other is at Shermay Cooking School itself (www.shermay.com). Otherwise, you can find cupcake cases of that shape (but with strawberry printing) at Phoon Huat outlets :)


  10. May I just add that Sun Lik and Ailin also carry the white cupcake case? Sun Lik seems to have more sizes, I just got the smaller size from there 200 pcs - S$10.60.

  12. thx dears, i’ve also been meaning to visit sun lik & ghim hin lee, but heard that their stuffs arent really cheap (for sun lik). one blogger bought cookie bags at 70 cents each! thx to elyn for recommending ailin too =) btw, has anybody visited chong trading @ the adelphi before? wonder what it sells?

    Chong Trading specialises in some of the Wilton products not found elsewhere in Singapore, so naturally they aren’t cheap either. :D


  14. I think we can organise a Baking Supplies one-day tour. The itinery will be Gim Hin Lee -> Ailin -> Sun Lik -> BIY. Actually JB will be one of the place to go, I’ve been to Ng Ming Huat and the decor variety is better and in ringgit the cupake case are slightly cheaper too.

    Actually for cupcake white case, PH is still quite cheap, the strawberry print are at 200 pcs - S$12.60 whilst Sun Lik is probably slightly more BUT they have more sizes even to a quite big one. Ailin is selling size 50 (normal size one) for 50 pcs at S$5.

    Just wanna check the ingredients in the receipes provided by Joycelyn, are they easily available atPhoon Huat or sun lik??

    The ingredients are easily available at either Phoon Huat, Sun Lik or Shermays itself. No worries about that :)

    Oh thats great cos i saw the exchanged lines betw you n evan abt the ” magasdesca vanilla bon bon paste”, it sounds expensive and I was worried. Thank for clearing my doubts =D

    Although it is recommended during the workshop that we use madagascar vanilla bean paste, but you can also you normal vanilla extract if you’re not prepared to invest in the costly bean paste. :)

    Hi there.

    Sun Lik has more finer caster sugar at 1.90/kg n even the cake flour is cheaper than in Ghim Lee, as well as the butter. Sun Lik n Ghim Lee’s shops are no doubt more organised than Ailin. Chong’s Trading mostly sells bakeware items, not ingredients. But they have more Wilton’s stuff you can ever find in Singapore.

    Yup, the cup for the cupcakes do have more sizes to choose from. n more cheaper in terms of quantity than you buy at Ghim Lee. Ghim Lee mainly sells Bake King’s products.
