Banana Oatmeal Cookies
I actually did not bake these cookies recently; baked them last year in June and brought them to the office for the colleagues to try. The recipe kind of reappeared as I was tidying my study room.
I’m not exactly a huge fan of bananas although I don’t mind them and honestly, I’m not too proud of the cookies. The hubby tasted and didn’t like it. But still, back then, I thought I should not waste 24 otherwise good cookies just because they didn’t taste nice. Most guys I know (including my colleagues) aren’t that discerning when it comes to free food.
Surprisingly, they were a big hit with my colleagues. So I decided to share this recipe, which, by the way, was taken from bakingsheet, my favourite source for some really original yet quirky recipes.

Banana Oatmeal Cookies
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp butter, very soft
1/2 cup sugar
1/2 cup brown sugar
1/4 cup mashed banana
1 egg
1 tsp vanilla
1 1/2 cups oats
1 cup chocolate chips
- Preheat oven to 180°C.
- Prepare a baking tray lined with non-stick baking paper.
- Sift together the all purpose flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together the soft butter and sugars.
- Add in the egg, vanilla and mashed banana and beat the mixture until combined.
- Stir in the dry ingredients at low sped until combined.
- Add in the oats and chocolate chips and stir by hand until combined.
- Drop doughs of about 1 tbsp each onto the baking tray.
- Bake for 12 minutes, or until cookies are lightly browned.
- Cool cookies on tray for about 5 minutes before transferring onto cooling rack.
Yield : 24 cookies
So there you go, a recipe which might not necessarily sit very well with non-banana fans, but nonetheless, a nice change from the usual type of cookies we always get.
