Banana Oatmeal Cookies

I actually did not bake these cookies recently; baked them last year in June and brought them to the office for the colleagues to try.  The recipe kind of reappeared as I was tidying my study room.

I’m not exactly a huge fan of bananas although I don’t mind them and honestly, I’m not too proud of the cookies. The hubby tasted and didn’t like it.  But still, back then, I thought I should not waste 24 otherwise good cookies just because they didn’t taste nice.  Most guys I know (including my colleagues) aren’t that discerning when it comes to free food.

Surprisingly, they were a big hit with my colleagues.  So I decided to share this recipe, which, by the way, was taken from bakingsheet, my favourite source for some really original yet quirky recipes.

Banana Oatmeal Cookies

Banana Oatmeal Cookies
1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp butter, very soft
1/2 cup sugar
1/2 cup brown sugar
1/4 cup mashed banana
1 egg
1 tsp vanilla
1 1/2 cups oats
1 cup chocolate chips

  1. Preheat oven to 180°C.
  2. Prepare a baking tray lined with non-stick baking paper.
  3. Sift together the all purpose flour, baking powder, baking soda and salt.  Set aside.
  4. In a large bowl, cream together the soft butter and sugars.
  5. Add in the egg, vanilla and mashed banana and beat the mixture until combined.
  6. Stir in the dry ingredients at low sped until combined.
  7. Add in the oats and chocolate chips and stir by hand until combined.
  8. Drop doughs of about 1 tbsp each onto the baking tray.
  9. Bake for 12 minutes, or until cookies are lightly browned.
  10. Cool cookies on tray for about 5 minutes before transferring onto cooling rack.

Yield : 24 cookies

So there you go, a recipe which might not necessarily sit very well with non-banana fans, but nonetheless, a nice change from the usual type of cookies we always get.
